This Japanese Higonokami knife has a core of Japanese Aogami # 1 "Blue paper" carbon steel (non-stainless). This double-sided sharpened knife is completely forged by the only master smith who is allowed to make Higonokami knives (Motosuke Nagao). The blade is sturdy and manually sharpened and is very easy to sharpen yourself. This is the original version with a brass handle and Aogami steel blade (Sanmai forged).
This knife can be ordered in 3 different lengths, you can select the correct length during your ordering process. (Because these are handmade products, the final knife delivered may be several mm longer or shorter than the stated length). Note that the stated length is measured incl. The Chikiri (lever), the cutting length of the blade with a 100 mm Higonokami is approximately 75 mm. This is measured according to the traditional Japanese method.

Some editions have a notch in the handle (90 and 100 mm) to make it easier to remove the knife from the handle. The 120mm XL version does NOT have the notch. (The piece in the images is the 120 mm without notch).
