Miki M405 Deba, 150 mm,
This Japanese cleaver knife has a blade of Japanese VG-1 carbon steel (stainless) with a softer steel on the outside. This knife is forged in the so-called Kasumi-yaki technique, where the blade is made up of a soft steel for the front (logo side) and the back and a hard steel for the hollow side and the cut. This single-sided sharpened knife is completely hand-forged by Miki Hamono's forge and is unique in its kind. A Deba is the typical Japanese cleaver knife, because of its shape and weight, this knife is extremely suitable for preparing fish (for removing heads, bones and gills), but also for poultry or vegetables with a hard skin or hard core.
