This Japanese sushi knife has a Sanmai forged blade with core steel of Japanese Shirogami # 2 steel ("white steel") (non-stainless) and a softer type of steel for the outside. This single-sided sharpened knife is completely hand-forged by the master smith Masamitsu-san of Miki Hamono and is unique in its kind. A Yanagiba knife is the typical Japanese sushi / sashimi knife, because of its shape and length, this knife is ideal for cutting raw fish. The length makes it possible to cut a piece of sashimi in 1 stroke.

Because this knife has a Mune-machi (notch in the blade when entering the handle), the length is traditionally measured from the machi, the blade knife is therefore somewhat shorter than the "regular" yanagibas of the same length that are measured from the Ago (back point).
