Baishinshi Kunimitsu Kiridashi Kogatana,
A razor-sharp knife of traditional Japanese steel. This type of knife is used in Japan for wood carving and as a hobby knife. This knife has a core of Japanese Shirogami #2 White paper carbon steel. Provided with a layer of stainless steel for protection (Sanmai forged), this knife is single-sided sharpened so that this blade has an even finer cut. This knife was manually forged and sharpened in the small Baishinshi smithy (梅心子 國 光) in Sanjo. This family has been working for more than 250 years in forging Japanese knives and tools, the current smith is Umeda Kunimitsu (7th generation).
This knife is available in 5 sizes:
