Masutani V-1 Tsuchime Nakiri (vegetable knife)

This Japanese vegetable knife has a blade of double-sided and laminated (sanmai) stainless steel with core of Japanese V-1 steel. The blade is extremely thin and manually sharpened and has no thickenings, sharpening this knife using Japanese water stones is very easy.
These knives are hand made in Echizen Japan by Masutani san. Masutani san (1944) has been a full-fledged knife smith since he was 30 years old. Because of his years of experience, he has now brought a knife series to the market that has a very high price/quality ratio.
The V-1 steel is covered with two layers of softer steel, these ensure that the core steel is resistant to possible damage and oxidation. In addition, the knife has a very nice Tsuchime (hammered) pattern.
