Kyo Higashiyama ceramic polishing stone

High quality Japanese water stone with a grain size of 10000. These are stones that are also suitable for professional use.

The stone has a very good grinding effect without being overly aggressive. This stone is a perfect polishing stone after using a somewhat coarser stone (# 2000- # 8000 grit.),

Grain size (Grit)
The grain size of Japanese sharpening stones is expressed as a number. The higher the number, the finer the grinding grain and the sharper the result. In principle there are 3 types of stones:

Sharpening stones (Japanese grain size 80-400)
Whetstones (400-3000)
Polishing stones (3000-30,000)
Which stone you start with depends on the time you have and the condition of the knife. If the knife is really blunt or damaged, you start with a sharpening stone. A whetstone can then be used to refine the cut. With a less bone or undamaged knife, you can immediately start with a whetstone (for example, a 1000 or 1200 stone). It is essential to finish with a polishing stone (normally between 4000 and 8000 grit), this is meant to get the blade razor sharp. In our opinion, the combination between a whetstone (1000 or 1200) with a 4000-8000 polishing stone is an ideal starter package. Polishing stones above 8000 grit do not necessarily produce a sharper result, this also depends on the steel type.
