This Japanese fish knife has a core of Japanese Shirogami # 2 carbon steel with a protective layer (Sanmai) on the outside. This double-sided sharpened knife has a black (Kurochi) protective layer. This knife is completely forged by hand in a small forge in Tosa. The blade is very thin and sharpened manually and has no thickening, which makes grinding very easy.

Like all Japanese knives, the handmade knives from Tosa are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.

What are Funayukis?
Funayuki is a broad classification of knives that can refer to a range of different design features. Originally, the funayuki was designed as a multifunctional knife for use on fishing boats. Nowadays, the way the term is used depends on the knife maker and how they choose to design and market their knives. Various characteristics that have funayukis in common are: a fairly flat blade profile with relatively little belly; a short, handy size; and the knife can be single sided or not. In general, these knives are great additions or replacements for the gyuto or chef's knife like a centipede in the kitchen. Many funayukis are for preparing fish, just like a deba or a yanagiba.
