This Japanese chef's knife has a core of Japanese VG10 carbon steel (stainless) with stainless Suminagashi (16-layer pattern violence) protective layer. This double-sided sharpened knife is completely hand-forged by Miki Hamono's forge and is unique in its kind. The blade is very thin and sharpened manually and has no thickening, which makes grinding very easy. A Gyuto knife (literally "cow knife") is the typical Japanese chef's knife, because of its shape, this knife is ideal for cutting meat and fish.
