This beautiful Japanese vegetable knife has a classic single-sided sharpened blade for left-handed use. The knife has a core of Japanese Shirogami carbon steel and has a traditional handle of Honoki wood. Completely hand-forged by Shigekatsu-san, this knife is one of a kind.
A Usuba is the traditional single-sided sharpened vegetable knife from Japan. Due to the straight cut and the concave in the back of the knife, this knife is excellent for embossing. A Usuba is also used for specialized cuts such as katsuramuki, which involves peeling a vegetable cylinder into a thin sheet.
