This Japanese chef's knife has a core of Japanese Aogami #2 carbon steel with a protective layer (Sanmai) on the outside. This double-sided sharpened knife has a black (Kurochi) protective layer. This knife is completely hand forged in the Sadamune forge in Tosa. The blade is very thin and manually sharpened and has no thickenings, which makes sharpening very easy. This knife is not supplied razor sharp. If you want this razor sharp delivered, you can have the edge polished by us with the polishing service.

- Handle: D-shaped walnut wood (Kurumi) and crop of black plastic (only suitable for right-handed use), the plastic may still contain some casting marks, so these are no damage but production marks.
Like all Japanese knives, the handmade knives from Arai Yami are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
