Makoto Kurosaki SG2 Tsuchime gyuto,

Stainless steel blade Japanese R2 (SG2) powder steel with two layers of stainless steel for the outside (Sanmai forged) This knife is completely hand-forged by the blacksmith Makoto Kurosaki-san. (Yu Kurosaki's older brother).

Normally R2 powder steel can be hardened to a hardness of 65-66 Rockwell, but Kurosaki has opted for a hardness of 63-64 Rockwell for this professional line, making it easy to sharpen the knives yourself.

The knife is designed to cut fish, meat and vegetables. The knife is similar to a western chef's knife.
