Katsumoto Saizen series ZDP set of petty, nakiri and Kiritsuke-gyuto
Double-sided sharpened and laminated (Sanmai) blade made of stainless steel with a core of the very special Japanese ZDP-189 steel, one of the hardest types of steel to use in kitchen knives. The blade is extremely thin and manually sharpened and has no thickenings, which makes sharpening on Japanese water stones very easy. These knives have one of the thinnest edges in our collection. Together with the chosen type of steel, this makes these knives one of the best knives in the world.
The stainless core steel is forged between two layers of softer steel, this outer layer is hand polished for a smooth satin look and feel. It also ensures that the core steel is well protected against possible damage and oxidation.

Hosokawa Katsumoto (1430-1473) was a Shogun governor in the 15th century and a key figure in Japan's Onin War. With more than 80,000 men he fought in the former capital Kyōto against his father Yamana Sozen. After 10 years of war, Kyōto was destroyed and neither side could claim victory.

ZDP-189 – The steel contains as much as 3% carbon (C), which is one of the major elements contributing to strength and is typically found in amounts as low as 1% in other types of solid steel, while the chromium (Cr) content , which prevents corrosion, is almost 20% It also contains 1.5% Tungsten (W), which significantly increases the wear resistance of steel, 1.3% Molybdenum (Mo), which helps to maintain the strength and power of steel varying temperatures, and 0.10% Vanadium (V), the most important element in increasing steel strength.
These knives are not dishwasher safe and very sensitive to hard and/or frozen products.
