This sturdy Japanese chef's knife has a core of Japanese R2 (stainless) carbon steel with a 33-layer damascus protective layer. This double-sided sharpened knife is completely hand-forged by one of our favorite knife smiths Shigeki Tanaka. The blade is quite thin but sturdy and manually sharpened. It has no thickenings, making sharpening very easy. A Gyuto is a universal knife that can be used for meat, fish and vegetables.
