Kagemitsu 竜巻 Tatsumaki gyuto
Double-sided sharpened and laminated (suminagashi) stainless steel blade with a core of Japanese AUS10 steel (with damascus outer layer). The blade is extremely thin and manually sharpened and has no thickening, which makes sharpening on Japanese water stones very easy.
These knives are made in Echizen Japan. The steel is forged between two layers of softer steel, this outer layer is made of pattern welded steel which gives a very nice 'vortex' pattern. It ensures that the core steel is well protected against possible damage and oxidation. The name in the blade is 竜巻 Tatsumaki which literally means 'Tornado'. These knives can also be ordered without a logo and you can have your own name engraved if desired.
