This Japanese universal knife has a core of Japanese Shirogami carbon steel with a protective layer (Sanmai) on the outside. This double -sided cut knife is equipped with a black (kurochi) protective layer. This knife is completely forged by hand by the master blacksmith Junichi Ide from Shimabara (Nagasaki) and is unique in its kind. The blade is very thin and manually sharpened. This specific knife has a heel which is unique for Japanese knives. Because of this you have less problems with the often very sharp back of the blade.
Yosimitu Kajiya is a small forge (Kajiya) in the small town of Shimabara, in the Nagasaki prefecture. The forge was founded in 1937 by the great -grandfather of the current blacksmith. Junichi Ide is the third generation blacksmith at Yosimitu Kajiya and forges and grinds all knives itself, which is quite exceptional in Japan.
