This Japanese chefs knife has a core of Japanese Shirogami carbon steel with a protective layer (Sanmai) on the outside. This double-sided sharpened knife has a black (Kurochi) protective layer. This knife is completely hand-forged by master blacksmith Junichi Ide from Shimabara (Nagasaki) and is unique in its kind. The blade is very thin and manually sharpened and has no thickenings, making sharpening very easy.
Yosimitu Kajiya is a small forge (Kajiya) in the small town of Shimabara, Nagasaki Prefecture. The forge was founded by the great-grandfather of the current blacksmith in 1937. Junichi Ide is the third generation blacksmith at Yosimitu Kajiya and forges and sharpens all the knives himself, which is quite exceptional in Japan.
