Konosuke HD-2 Nakiri, Honoki octagonal handle,
Double-sided sharpened blade with a core of semi-stainless Japanese HD-2 steel (comparable in hardness to Shirogami #2 steel). The blade is sturdy and manually sharpened and has no thickenings, which makes sharpening very easy. The handle is traditional octagonal and is suitable for both left and right-handed use. The handle is made of Japanese Honoki wood and fitted with a black buffalo horn bolster. The HD-2 steel beautifully bridged the gap between the brittle Carbon steel like Shirogami and the more stainless steels. HD-2 is semi-stainless and much less brittle then Shirogami steel but still gets a very sharp and agressive edge.

Like all Japanese knives, the Konosuke knives are not dishwasher safe and sensitive to oxidation, cleaning and drying after each use and putting in the oil (camellia oil) is the best treatment for these exclusive products.
