This Japanese chefs knife is developed for professional use and is made of a special Japanese rust-resistant steel. The double-sided sharpened blade is very thin and manually sharpened and has no thickenings, which makes sharpening very easy.

Decades of Japanese artisanship and the finest quality materials make Nagomi knives an investment for home as well as the workspace. Nagomi blades are revered by patissiers and chefs from around the world.

This special Chrome molybdenum steel took a year to develop and has excellent durability of cutting quality and easy to maintain. Each of the knives is handcrafted by skilled craftsmen in the Mitsuboshi factory where they are producing high quality knives from 1873.

As an upgraded version of the Nagomi Japan Chef Knife, the PROFESSIONAL Chef Knife is crafted from a rare specialty stainless steel. Sourcing this "secret" material took more than a year of discovery and research, and the composition of the steel is yet to be publicly disclosed. Michelin Chefs worldwide have attested this beautiful knife and its blade to be impeccably sharp, well balanced, and easy to sharpen.

Rivets are uniquely sealed and hidden to keep the tang of the blade in place unnoticeably. In the final process of crafting our knives, each handle is polished by hand to attain a pristine and sleek finish.

Like all Japanese knives, Mitsuboshi handmade knives are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
