Double-sided sharpened blade of non-stainless Shirogami steel (White paper steel). The blade is extremely thin and manually sharpened and has no thickening, which makes sharpening on Japanese water stones very easy. These knives are extremely sharp and that is possible because of the very pure Shirogami steel that consists only of iron and carbon. Sharper steel does not exist. The steel is very sensitive to chipping, oxidation and damage but also remains extremely sharp for a long time.
If you are looking for absolute sharpness, these knives are the only choice.
These knives are hand-forged by the master smith Norihiko Yamakawa (八間川憲彦) and Yoshito Yamakawa (八間川義人) in the Goko forge in the Chiba prefecture (Former Mushashi region) in Japan.
The Japanese kanji on the blade are:
武蔵国 光月作 (Musashi no Kuni Kōzuki Saku)
Meaning:
• 武蔵国 (Musashi no Kuni): Musashi Province (a historical province in Japan, now parts of Tokyo, Saitama and Kanagawa).
• 光月 (Kōzuki): the name of the smith or maker.
• 作 (Saku): Made by.
only the knives that have 光月作 written on them are made by master smith Norihiko Yamakawaon the other side it says:
本銘 (Honmei)
Meaning:
• 本 (Hon): Authentic, original, genuine
• 銘 (Mei): Inscription, mark, engraving
Free translation:
“Authentic inscription” or “Original engraving.”
This indicates that the knife is an authentic and officially engraved piece, which is often used to indicate the authenticity and origin of high-quality knives.
The quality of the knife is certified by the Ministry of Economic Affairs, Trade and Industry with a sticker stating “CHIBA Koushogu” (千葉工匠具), which literally translates as “Tools of Chiba artisans”.
