This Japanese sushi knife has a core of Japanese Shirogami carbon steel with a protective layer (Sanmai) on the outside. This double-sided sharpened knife has a black (Kurochi) protective layer. This knife is completely hand-forged by the master blacksmith Junichi Ide from Shimabara (Nagasaki) and is unique in its kind. The blade is very thin and manually sharpened.
Yosimitu Kajiya is a small forge (Kajiya) in the small town of Shimabara, in the prefecture of Nagasaki. The forge was founded in 1937 by the great-grandfather of the current blacksmith. Junichi Ide is the third generation blacksmith at Yosimitu Kajiya and forges and sharpens all the knives himself, which is quite exceptional in Japan.
