In Japan, this traditional kitchen instrument is mainly used for the planing of dried tuna. The Japanese name for dried, fermented and smoked tuna (Katsuwonus pelamis) is Katsuobushi (鰹 節 or か つ お ぶ し?) Or okaka (お か か?), Sometimes the cheaper mackerel-like fish is used (Bonito).

The shaved Katsuobushi and dried kelp are the main ingredients of the famous Dashi soup (which also makes Miso soup).

Katsuobushi is today typically found in bags or small pink-brown shavings. Smaller, thinner shavings, called hanakatsuo (花 鰹 な か つ つ お), are used as a flavoring and topping for many Japanese dishes, such as okonomiyaki. Larger, thicker shavings, called kezurikatsuo (削 り 鰹; け ず り か つ お), are used to make the ubiquitous dashi stock.

In the European kitchen, a Katsubako is ideal for cutting parmesan cheese, dried fruit and vegetables, truffles and hard vegetables such as carrots. The grated ingredients are collected in a wooden tray.

This beautiful large Katsubako is made from laquered white ash wood and the blade is made of Japanese sk-5 carbon steel (non-rust resistant) and is placed in Japanese oak.
