High quality Japanese waterstone from Shapton. The Japanese stone manufacturer Shapton, from Nabatame, (Tochigi), makes the hardest stones. In contrast to almost all other brands, Shapton stones stay flat longer and need to be flattened much less often.
The sharpening process feels very different than when working on softer stones. Men can feel the relative hardness of the Shapton stones while sharpening and sometimes it also feels like the stone does not really do what but it certainly works and also very quickly.

PLEASE PAY ATTENTION:
It is very important not to leave these Shapton stones in the water for too long. A few minutes for the large stones is more than enough and the polishing stones (from #4000) only need to be sprinkled. These stones are made of ceramic powder with a synthetic resin binder. These "Splash-and-Go" stones do not tolerate long-term storage in water. Only use as much water as the stone needs. Wipe the stone clean with a towel immediately after grinding. This keeps the stone looking neat and starts the drying process. Place the stone in a place where no large surface is active. Let the stone dry horizontally, for example by placing a door seam over a pen. Let the stone dry slowly and quietly without additional heating. Do not expose the stone directly to sunlight and do not let the stone freeze if there is still moisture in the stone. The drying process takes more than a day. Store the stone protected from impact. Do not put the stone in a plastic bag if there is still moisture in the stone.

Grit size
The grit size of Japanese grinding stones is substantially expressed in a number. The higher the number, the finer the abrasive grit and the sharper the result. In principle there are 3 types of stones:
- Sharpening stones (Japanese grit size 80-400)
- Whetstones (400-3000)
- Polishing stones (3000-30,000)
Which stone to start with depends on the time available and the condition of the knife. If the knife is really blunt from damage, you start with a sharpening stone. Then a whetstone can be used to refine the edge. If the knife is less blunt from undamaged, you can start immediately with a whetstone (for example a 1000 or 1200 stone). It is essential to finish with a polishing stone (normally between grit 4000 and 12000), this is intended to get the knife razor sharp. The combination of a whetstone (1000 of 1200) with a 4000-12000 polishing stone is in our opinion an ideal starter package. Polishing stones above 8000 grain do not necessarily produce a sharper result, this also depends on the type of steel.
